The cake was called “Zebra” for a reason. The dessert is a cake of fancy light and dark stripes, reminiscent of the colors of a zebra skin. This is easy to achieve. The previously prepared dough is laid out on a sheet greased or lined with parchment in turn: a spoonful of dark dough is placed in the center of the baking sheet, light dough is placed in the center of the chocolate dough, then dark again, then light, etc., until the base is finished.

Next, all that remains is to put the sheet in the oven and wait about half an hour. Further decoration of the cake depends on your imagination. Most often, the cake is simply filled with cream or glaze; sometimes the cake is cut and soaked in something. You can layer the cake with fruits, nuts or other fillings.

Ingredients:

25 g each of salt and soda;

365 g flour;

255 ml kefir;

225 g sugar;

110 g cocoa powder;

65 g butter.

3. Pour in cold kefir, add salt and continue beating for a few more minutes.

Vegetable oil - 35 ml.

1. Combine eggs with sugar and beat with a mixer until a stable snow-white mass.

2. Pour in cold kefir and beat for another 2 minutes.

Ingredients:

465 g flour;

Sugar - 165 g;

Vegetable oil - 135 ml;

Kefir with high fat content - 255 ml;

Salt, vanillin - 5 g each;

Soda - 45 g;

Acetic acid - 15 ml;

Cocoa - 85 g.

Cooking method:

1. Pour kefir and vegetable oil into beaten eggs with sugar, stir well with a spoon.

Regarding the fat content of kefir itself, mine is 1%. But it suits any fat content.

    In another container, combine granulated sugar and four large eggs. If you are going to beat with a hand whisk, work intensively and for a long time, at least 10 minutes. It is important to fluff the composition, increase the volume three times and almost completely dissolve the sugar crystals.

    To speed up the process and ease of action, of course, I advise you to use a mixer - the higher its power, the sooner the eggs and sugar will whip into a lush foam filled with small bubbles. If planning to add additional flavoring, pour in the fragrant concentrate now. I like notes of alcohol (rum, brandy), but there can also be aromas of lemon, almond, cinnamon.

    At this point, we have two liquid compositions - kefir slightly foamed with soda and an egg-sugar substance. Mix both, I had to get a bigger bowl. We bring it to complete unification and homogeneity. And then we begin to gradually introduce the sifted flour.

    Add flour about 100 g at a time, removing all dry areas and clots each time. It is necessary to knead the dough for the Zebra pie that is smooth, shiny and flows in a thick stream from the whisk-spoon.

    Having finished kneading, separate part of the viscous dough into a clean bowl. To one add, after sifting, cocoa powder. Stir again until the color is even and deep. The proportions of light and dark dough depend on your preferences. Some divide it in half, while others - lovers of chocolate desserts - allocate two or three doughs with cocoa powder. I will say once again that the taste of the product depends on the quality of cocoa.

    Grease a fireproof round pan with cold butter and sprinkle with a thin layer of flour or line with baking paper. Alternately place one and a half to two tablespoons of dough in the center of the bottom - sometimes light, sometimes dark. You need to pour it into one point, then the circles will spread more or less evenly over the entire area.

    The beauty of the Zebra cake is in the cut, and other than a handful of powder (or icing), the decor can be skipped. Many cooks draw lines on top of the semi-finished product with a skewer, mixing two colors - this is how a “cobweb” or other ornament appears.
