At the same time, constantly changing the additives, you will get new tastes of meatballs. In addition, these balls can be frozen for future use and kept in the refrigerator. Cooking cabbage soup with meatballs


1. Peel the potatoes, cut them into slices about 1.5 cm in size with a sharp knife and place them in the cooking pot. Remove the skin from the onion and place it in a saucepan. Add bay leaf and peppercorns.


2. Fill the potatoes with water and put them on the stove to cook. After boiling, reduce the temperature and skim off the foam.


3. Season the minced meat with salt, pepper and any spices. I add more nutmeg. You can buy ready-made minced meat or prepare it yourself. To do this, pass it through a meat grinder. To make the meatballs more tender, twist the meat twice. You can also use a blender to grind it.


4. Form small meatballs.


5. Fry the carrots in a frying pan until transparent and place in the pan with the potatoes.


6. Add meatballs immediately. Please note that the meatballs should be placed in boiling water; if you put them in cool or warm broth, they will become rubbery.


7. Chop the cabbage and add to the soup.


8. Boil the cabbage soup for about 5-7 minutes and season it with garlic passed through a press.

Russian cabbage soup is a classic vegetable soup that has long been loved by Slavic housewives. They are filled with nutrients, are well nourishing and give a feeling of peace and harmony.

Previously, there was no such “luxury” as chicken broth. If you wanted to make soup, you had to make everything yourself from scratch. In most cases, soup preparation began by simmering the meat on the bones for a long time in a large pot or pan to create a rich, flavorful broth, and then adding other ingredients. If you consider that families were, as a rule, large, you can imagine how difficult it was for women with 5-7 children.

But instead of cooking this soup for hours, you can make cabbage soup with meatballs for a quick and convenient way to add meatiness and protein to the soup.

This soup is chock-full of vegetables whose flavors give it deep flavor and a healthy, clear color at the same time. I prefer using chicken meatballs, but you can of course make meatballs of any other type of meat. In about half an hour, you should have a pot filled with rich, brightly colored soup with cute meat balls. Well, let's not forget how amazingly delicious it is, which, in the end, is what matters most.

To prepare cabbage soup with meatballs we will need:

    2 liters of water

    3 potatoes


To prepare meatballs you will need:

0.5 kilograms of chicken meat
- 2 slices of white bread or loaf
- 1/3 – ½ cup milk
- 2 tablespoons sour cream
- ½ small onion
- 1 clove of garlic
- ¾ teaspoon salt
- ¾ teaspoon ground black pepper
- a mixture of greens - dill, parsley and green onions
- sour cream - to taste


Cooking process:

Now you can start cooking directly. First, pour water into a large saucepan and bring to a boil. Then I add peeled and diced potatoes and finely chopped cabbage to boiling water. I season everything with salt and pepper.

Meanwhile, melt the butter in a frying pan and add peeled and chopped onions, carrots, chopped celery and squeezed garlic. Season with salt and pepper and cook over medium heat for about 5 minutes until the vegetables are soft.

Next comes tomatoes and peppers. To easily and quickly peel tomatoes, I make cross-shaped cuts on them and lower them into boiling water for 2-3 minutes. After this procedure, the skin comes off well. I add the tomatoes and peppers to the frying pan with the other vegetables, season with salt and pepper and cook for another 3 minutes, stirring constantly.

After this, I add the vegetables to the pot of soup. Cook the cabbage soup over low heat for about 20 minutes until the potatoes are soft.

While the soup is cooking, you can start preparing the meatballs. To do this, I toast white bread and pour milk on it. I soak it for 2 minutes and then puree it in a food processor. If you are not using a loaf, but just white bread, then one slice is enough. The loaf is usually very light and airy, so you will need 2 slices, but white bread is denser and stickier, and two slices will be too much.

For meatballs, passing chicken meat through a meat grinder, grating onions on a fine grater, peeling and passing 1 clove of garlic through a garlic grinder, chopping fresh herbs: dill, parsley and green onions. I add all the crushed ingredients to the bowl with the wet bread, add sour cream and mix everything thoroughly. The minced meatballs should be very soft. This is normal, as it should be: the meatballs will turn out super juicy and tender.

To prevent the meat mixture from sticking to your hands, I wet them with cold water, take a small amount of minced meat and form a ball, and then throw the meatball into the boiling soup.

White cabbage soup with meatballs is an unusual, but very tasty, at the same time light and satisfying first course. Traditionally, Russian cabbage soup is prepared using meat broth and sauerkraut. Our version of cabbage soup is very different from the traditional one, but it turns out not only, no less, but maybe even more tasty. White cabbage soup is prepared from fresh cabbage with the addition of other vegetables, flour dressing and meatballs. The dish is not at all complicated, but meatballs add such a special taste and sophistication to it that it is impossible to tear yourself away. Serving white cabbage soup with meatballs is very tasty with rich sour cream and white bread.

Cooking method

Pour about 2 liters of water into a saucepan and place over medium heat. While the water is heating up, peel and wash the vegetables. Thinly slice the cabbage, cut the carrots into strips, and cut the onion into cubes along with the celery. Place vegetables in boiling water, add salt and reduce heat. Let them cook quietly.

Meanwhile, place the minced meat in a bowl, add the egg and mix thoroughly. Add the bread soaked in milk or water and mix thoroughly again. Add salt and pepper and finely chopped herbs. Mix everything until smooth and form small round balls. Place meatballs into boiling soup.

Fry the flour in a dry frying pan. Add vegetable oil to it and fry everything together for about 2 minutes. Transfer the dressing to the cabbage soup. Finely chop the parsley root and tomatoes into pieces and add to the pan. Let the cabbage soup boil and cook for about 15-20 minutes until done. Pour cabbage soup into deep tureens, add chopped herbs to each tureen and serve immediately. Serve sour cream separately.

    When I buy meat for a child, I immediately grind the minced beef, make meatballs, and freeze them in the freezer. Then I put the frozen meatballs or meatballs in a freezer bag for further storage and take out the quantity that I need. Preparing baby cabbage soup and soups is very quick, because homemade semi-finished meat products are always at hand.

    To prepare children's or diet cabbage soup, put a pan of water on the fire, put the meatballs in the water. When the water begins to boil, be sure to remove the scale completely until the broth becomes clear.

    Prepare potatoes, cabbage, onions and carrots and chop them. We put the potatoes into the pan (you can immediately, if they are difficult to boil, or after the cabbage - as you wish), shredded cabbage.

    Sauté the onions and carrots in a frying pan with the addition of vegetable oil, adding a little salt (or, skipping this step, put the chopped onions and carrots in the cabbage soup along with the potatoes and meatballs).

    How to cook cabbage soup with meatballs

    1. Pour 1.7 liters of water into a saucepan and place it on the fire.
    2. Prepare the meatballs. To do this, mix minced meat (low-fat), beaten egg white (from a small egg), chopped onion and boiled rice. Season the minced meat with salt, cumin or ground black pepper and knead the ingredients well. The resulting mass can be slightly “beaten” so that the meatballs do not fall apart during the cooking process.
    3. Cut the peeled potatoes into medium cubes or slices. Place potatoes into boiling water. Form round balls of minced meat and add to cabbage soup. Cover the pan with a lid and cook the first dish over medium heat for 10 minutes after boiling.
    4. Chop the peeled onions and carrots. Simmer the vegetables in vegetable oil for 7 minutes over medium heat.
    5. Cut the white cabbage into thin shavings. Add the ingredient to the cabbage soup along with the sautéed vegetables. Cook the dish for another 15 minutes.
    6. Cut the tomatoes into slices. Add tomatoes to the first dish.
    7. Salt the cabbage soup, season it with spices and herbs and continue cooking for 5-7 minutes. Stop cooking and let the dish sit for 15 minutes. Remove the bay leaf from the broth. Serve hot cabbage soup with sour cream.
